They tend to "lower their prices" only during some kind of sale/promotion period, and it sounds like you just missed out on a sale.

Given that your travel is so soon, and during the busy summer holiday season, I would say the chances of prices coming down again are slim to remote.

(Going from €500 to €1000 is, though, quite a jump. Are you sure the first price mentioned was correct?)
