Breakfast buffet at Café de la Paix offers a very large choice (including Chinese breakfast of course).
And yes, you pay the price of a luxury hotel in Paris.
If you want a cheaper option, you could have a breakfast at Au Pain Quotidien, place du Marché Saint Honoré (10 minutes walk from the hotel).
