Personally I would check in the bags in T3 first, then go over to T5 and do your AMs back-to-back. That way you don't need to worry about your bags, especially if the AMS is delayed.

The T5-T3 airside transit is quite slow, but honestly i'd rather take the direct airside bus as it involves less walking overall.
