This sounds like a great itinerary. The Desert Inn is where we stayed outside Erfoud; it's an especially cool place (quite literally so at night -- there's no heat, but there's a big fireplace in the dining room, and they give you hot water bottles to take to bed).
Do consider renting a 4WD vehicle -- you may encounter snow when you drive through the mountains (in November we drove through quite a storm between Ifrane and Midelt, on the way from Fes to Erfoud). 4WD will also allow you to drive all the way around the great sand dunes at Merzouga.
