The main brands do. JW Marriott, Renaissance, Marriott, Autograph Collection. The limited service brands (and also Ritz) don't.
FWIW - that's actually been my Don Quxiote thing (prior to & having nothing to do w/ SPG). Get Marriott to add incidental spend credit on the brands that have stuff you actually can spend incidental $$ on. I get way back when when there wasn't anything to spend $$ on, but w/ Ritz, Edition, CY (Bistro), Springhill Suites (bar) it doesn't apply anymore. So while some go for other things that's my big hill to climb.
However, tying back into the Marriott credit card. If you do spend some $$ at a brand that doesn't normally offer incidental spend but you put it on your credit card vs. charging it to your room & you have a Marriott credit card, it will code as a Marriott charge & you'll get the 5 points/$ spend.
