Best options for flying with a child fare FRA-YYZ-FRA

Very soon the baby will no longer be a baby and will be 2 yrs old.
Scenario: Mom (German) lives in Germany with the kid, Dad (Canadian) (me) lives in Canada. Complicated, yes.

For the past 2 yrs we were using EU Eastern Canada FP 8 Credits (Flex) I go to Germany twice a year and mom comes to Canada twice a year, at least so far.

Going forward it will be more costly. We always book our flights via AC.ca so exclusively take AC/LH direct flight. Have never really looked at other options.

That being said we also want to maximize our miles and wouldn't mind spending the extra $/€ to book Flex or PE, of course within “reason”. Example this year I took PE and they will be taking PE coming to Canada soon last trip before 2 yrs old.

Is it possible to book mom and kid to a different class? Mom = Flex, Kid = Tango. I understand that the ticket can range from say 5%-20% discount from the fare of the parent.

How about if the mom uses FP? Has anyone tried this with a child? How does AC decide for the % of the price? Via the FP or the current price?
