I'm trying to find information about taking a taxi from ITM to central Kyoto -- the approximate price, also if there are any issues in finding a driver willing to go to Kyoto.

ITM is considerably closer to Kyoto than KIX, so prices from the latter would not be all that useful. (And I am aware of the Osaka Airport Limo/Bus that has regularly-scheduled service from ITM to Kyoto station.)
