If you don't mind driving on the 'wrong' side of the road hire a car and drive to the Blue Mountains. They are about 90 minutes from central Sydney. If you want a coach trip - no problems. Whichever Sydney hotel you stay at will have several trips they can recommend usually picking up and returning to your hotel. I cannot recommend any particular coach company as I always drive, but a hotel recommended company should be fine. I have never heard of any problems with any of the many, many tour operators servicing the Blue Mountains. Be aware however that many coaches are filled with Japanese tourists so conversation with fellow travellers may be somewhat difficult.(unless you speak Japanese of course)
