I may be wrong, but I think there is only one legitimate option to accomplish this and that's to have someone else (a spouse, travel companion, etc.) book and pay for one of the nights in the middle of a multiple night stay. Under the program rules this should get you two stays and them one stay. You can always request to stay in the same room to minimize the travel impact, but understand that you could always be moved, especially if you're in an upgraded room as a diamond member and the other person booking has no status.
