OP, how about the fruit plate? It's not exactly an exciting meal and may not always be a great substitute for a hot diner, but I have a colleague who tries to eat quite healthy and he just has a standing order for fruit plate, which he's pretty happy with. It's also something that's hard for the caterers to screw up, unlike some of the hot meals.
I think the OP is trying to get a more Paleo meal when flying in J - that is, a good source of meat protein with some fat and the majority of carbs from veggies - so although most would see a fruit plate as a healthy option others might see it as a lot of carbohydrates from fructose.
