I too have seen two different people (one Male, one Female) on the 787 with their sole purpose of training staff. They did not really participate in the service , but were there to offer training on the new plane.
I know of one SD on here, who is also a FTer, although she doesn't post much.
What you are referring to are training coaches. (or whatever the formal term is).
When the 787 was first launched, her job was to train new crews on that aircraft. I'm hoping ACYYZ/SD can step in as I believe he explained this once on FT.
