After the booking, I received the confirmation from Amex and a "hotel voucher" was attached that mentions the service is payable by Tourico Holidays. Upon googling, there are some not-so-great reviews about the company. There was no mention of Tourico anywhere during the booking process, even upon checking hotel terms.
I will call Fairmont periodically to check whether they can confirm the booking. I'll check back in to provide updates.
For reference, FHR rate for a deluxe casita assuming an upgrade to the signature casita would have been about $3500 USD including the 2 free nights, taxes, and estimated resort fees. The rates are similar, but swapping appetite for luxury with FHR perks. You would also get the nights credited on the FHR rate. If you bought some gift cards with the 20% bonus and don't have plans to spend it yet, the FHR rate may come out ahead.
