You can always go to www.aa.com and look under the aavacations area. They have options to book hotel only and all-inclusives. You would need to check the prices against the others since I don't know a good price.

Also try looking at www.cancunmx.com There is usually some good info. There is also a message board with some hard core Cancun travelers that might could give you some options.
