Well, if your choice is between:

-No food or drink on the flight
-Delayed departure and possible misconnects due to dealing with catering after everyone has boarded
-A few minutes of standing in line while food is brought on,

Which would you choose? I think the latter is the least of the evils. A few minutes of standing has never killed even the most DYKWIA of 10mm GSes. Especially in this case with boarding amidships, it's not like overhead space is going to disappear on you.

In fact, I'd prefer in cases where Y pax don't have to walk through the F cabin that UA would board F last as a matter of course and not page F for boarding until about T-15, allowing the maximum amount of time in the lounge. That's what many foreign carriers do and it's quite seamless and stress-free.
