No, you don't have to use the Aerogold Visa to pay for the taxes and fees to use the Maple Leaf Lounge.
So long as you have redeemed the ticket from the Aeroplan account attached to the Visa card, and the flight is operated by Air Canada, you may access the lounge. Just present the Visa card.

However, since you did not use your CIBC Aerogold Visa to pay for the taxes and fees, you forfeited your automatic travel insurance coverage (except medical) that comes with the card. Why would you do that?

Yes, you may bring a guest for C$35 or C$45 per guest, depending on the entry time.
