This would be extraordinarily brazen (and there would be no point in doing so.) You could certainly, if you wanted to, pour yourself a huge glass and then discreetly decant it into a little hip flask, to enjoy on board later. You could. And you might. Unlikely anyone would notice (or care if they did.) But you couldn't decant an entire bottle without someone noticing. But even if you did, why fill it up again (it's there to be drunk); that would make you doubly suspicious (and weird.)
My guess is that the glass might have had some detergent remains in it, or was otherwise unfit for purpose.
