For one night and if you've never been to HKG, none of the above. I would instead get a harbour-view room at the Pen, or a harbour-view room at the Inter-Continental. The view of the harbour from the Pen or IC is (1)1000 times more interesting than from hotels on the HK island side and (2)one of the greatest sites on the planet, from early in the morning until very very late at night.
That said, if your business is across the street from the Mandarin or the Ritz and you figure that you'll be working from early morning until well into the evening, then I'd go for the convenience and service that those joints offer.
I'm sure the Hyatt is a pleasant enough property, but I can't think of 1 good thing to say about its location.
