Sure, a bed and breakfast could do something like that, but I think that it's much more complicated when there are commercial airplanes involved. It's part of the reason why IFE systems are often outdated and crazy expensive (I think I read that the cost runs into the thousands of dollars per screen because of the extensive design and testing requirements). I gather they don't want consumer-grade electronics that could glitch and fry the whole electrical system of the plane, start a fire, or interfere with the navigation/communication systems.
