Looks like Cathay has a good advantage of the other direction. Their travel times are shorter with good transits in HK.

Seat comfort is going to be reasonably similar on all of the airlines you mentioned. Unless one of them are fairly tall then I wouldn't take longer flights for a slightly different seat pitch. One thing to keep in mind if either are a bit wide, 787's have notoriously narrow seats in economy.
