Following up. I was successful in through-checking the bag over two tickets. The agent took the second ticket (the one that included my final destination) and temporarily added a dummy segment to the ticket that matched the segment on my first ticket. With that, she then printed out the bag tag. Next, she went back into the reservation system and cleaned both tickets up.
I wonder if that's the way they're "supposed" to do it...
...I'd be wary that the 2nd ticket gets messed up somehow in that process.
