None of the "restaurants" (term used loosely to describe the weak airport offerings) at MCI do any heavy-duty cooking, so unfortunately I think you are out of luck on finding ribs at the airport.
Trust me - if anyone was cooking up a full slab at the airport, I would have smelled it years ago, tracked it down, and probably missed my flight to sample it.
One of the little sandwich joints uses the Arthur Bryant brand name, but it bears zero resemblance to the original down at 18th & Brooklyn.
Wish there was a better answer...there just isn't enough connecting traffic to support good food at MCI.
