As others have noted, Bellagio is a bit more traditional, Aria has a wider selection (ethnic, seafood, etc.) and Cosmo is very modern with a more eclectic selection.

Aria is by far the most bright and "open" atmosphere, with real windows looking out on the pool...as far as I can recall the only top-tier buffet on the Strip that is like this.

All 3 are definitely "tasty", clean and well-serviced.

Saturday/Sunday generally = "brunch" spanning normal breakfast/lunch periods. The prices will go up a few bucks over holiday weekends for "special holiday" spreads. Otherwise, pricing on the various websites are accurate.
