You can use your US passport on departure (I don't think the airline passes this information onward to Immigration, in any case) and your Canadian passport upon entry into Canada. This is one of the great benefits of dual citizenship: never waiting in line when traveling between the two citizenship areas (US/ European Union comes to mind).
