I have skied Utah a lot and typically stay in suburban Sandy for less expensive lodging yet still good access to both Little Cottonwood (Snowbird, Alta) and Big Cottonwood Canyons (Solitude, Brighton).

A book I really like is the Unofficial Guide to Skiing and Snowboarding the West. Still a first edition from about 1992, so don't buy it new. I just picked up a couple for my kids at a bargain book store for $1. Anyway, it gives a very good overview of all the major ski areas in the US Rockies, and what they have to offer for varying abilities etc. I always use it when planning trips and deciding between areas.

Any specific questions about areas except the Canyons or Sundance, fire away and I'll try to answer.
