one thing way that the seat configuration is marketed (by the aircraft manufacturer) is based on a less than full load, while you assume a 100% full load in your calculation.

I have read (i forget where), that if you assume a load like %80, the 2-5-2 configuration does very well, because you can leave the middle seat in the 5 empty, and everyone is within one seat of the aisle.
