Seems strange to me as well, very formal but maybe they think of a plane as a meeting area.

To answer the OP, Most of the time I fly alone and about 40% of the time I have a female sitting next to me and most of the time they will talk a little while waiting for takeoff(some even offer me sweets) but after that they normally leave me alone for the most part because they want to watch the IFE too.
20% of the time it's a male next to me and only a few have spoken to me and only one has tried to talk beyond takeoff but quickly silenced him, I don't mind up until takeoff but after that it annoys me.
The other 40% of the time I have an empty seat next to me.
