Use Google maps on your phone/GPS-equipped tablet. I can generally get a signal if I'm within a seat of a window.
If you view your flight path while you still have a signal, the device will save that level of detail in Maps' cache, and you'll be able to view it without a data connection.
If you want to get the best possible map, get a copy of MS Streets and Trips (no longer in production) and a GPS receiver for your laptop.
