Different availability across different platforms (ITA Matrix/swiss.com/call center)

Hi there,
Have a question/observation:

I recently found a good P fare on ITA Matrix, and wanted to book it but swiss.com was giving me only Z fares.
So, I call LX and give the agent the flight numbers and dates, and she is telling me the flight is completely sold out.
Question is:
why is swiss.com still selling me seats on a flight that the call center says is completely booked (in all 3 classes)
Even agent was a bit surprised.

In the past, I have often found availability on swiss.com and ITA Matrix didn't match, but it was never a problem as the call center was always able to replicate the itineraries I built on ITA.

Based on personal experience, LX is the most glitchy of airlines. BA is the best, always able to find same fare on ba.com as on ITA.
LH and KL/AF sometimes OK, sometimes glitchy as well.

Would like some insight into this, as ITA is otherwise a great way to find fares. But only if one can actually book them, whether through the phone or online...
