Yes, very occasionally a POUG (see Dashboard under Upgrades) will be offered to a booking made with a redemption, allowing you to pay cash to upgrade to CW. I doubt that would be cost effective compared to a Dublin fare, and they are not that common. The other thing you can do is to buy Avios, which isn't normally recommended but if it's a small amount then there are sometimes deals to be had. More usually on the Iberia site, and all UK FTers really should have an IB account working (takes 90 days to be fully enabled) as well as an Avios.com account, since Avios can be freely transferred between the 3 accounts.

Have a look at Head For Points too, there may be some credit card deal or other special deal going which will boost your balance.

You can't do multi city Avios bookings online, so you'd need to call in for that. You can do multi city revenue bookings online however. Long standing nuisance. You can book Avios singles, but that is not at all advisable to USA, it works out a lot more expensive to that particular market.

It's not just DUB that has cheap revenue fares (though it's a very good place to start), also check ORK, SNN, GOT, CPH, AMS, SVG, MXP, BCN just in case there is a local sale on.
