In the case of this flight's scheduling, it would make much more sense to offer a quick single tray after take-off and let everyone get to sleep at a reasonable hour. Then take the full meal that's currently served at 2 am and instead begin the full service about 3 hours prior to landing in TLV, by which point most passengers are awake already and have no interest in sleeping any further, so they can actually choose to enjoy the meal instead of rushing through it at 2 am.
That would make a lot more sense, but I'm sure it's not the case.
The flight originates in SFO, leaving there at 2pm - so for those people, it's really only 9pm when the flight to TLV leaves - dinner makes more sense for them. But for the JFK people, it's rather insane to eat a big dinner at 2am.
P.S. - I called Delta - and there are 3 food services: Dinner, snack & "Supper". Apparently, there are 2 dinners served - one full and one "pre-arrival supper".
