I'm a gay rights lawyer and had no problem in UAE, but the caveat is there was no way anyone would have known unless they'd Googled me, I'm American which probably matters, and my current employer is the American government.
That being said, I've never heard of the UAE government arresting a foreigner merely for being gay (or for having consensual private gay sex). The bigger concern would be that they deny you entry to the country out of a fear you're going to foment unrest. I think if you get in, you're fine. But it's really all speculation.
There's an argument that canceling at this point and rebook ing with a new email address will seem fishy and draw even more attention to you.
