I had probably...4 flights last year (which for me was probably about 25% of my flights, since I don't fly as much as you guys) that were in the evening and greater than 900 miles, but were conveniently moved from the 7:45-ish time block to something like 8:05-8:15. I still think the meal cutoff time is ridiculous. I leave work at 6:00, drive home, pick up my wife and/or my stuff, drive to SLC, park and ride from a nearby hotel, and it's around 7:15. Drop off bags, go through security (thankfully precheck is open until 8:00), at the gate at 7:30 and just prior to preboarding. I haven't eaten since 12:30 or 1:00 in the afternoon. We have a two or two and a half hour flight, and the time at our destination is midnight. We're exhausted, tired, and if we're lucky get two passes at the snack basket. I mean now we've started bringing something light to eat on the way, but it's unfortunate. I imagine it's even more unfortunate for someone who is connecting from say, the west coast, quick layover, then continuing east. Not really time to stop for expensive unhealthy airport food, plus no meal on the plane. Oh well. At least they haven't started charging for snacks and beverages.
