We were in Dubai several years ago, but stayed in a 5 star international chain hotel.

My opinion is that you would most likely be fine especially if you do not search out other gays (and try to bring them back to your hotel etc). Yes, it would probably have been better if you did not use your work email for the reservation but my guess is that the hotel probably did not even look at the email address to figure out if you are gay or not - the reservation and email address was probably processed electronically without anyone even seeing it.

Again, I'm sure you'd be fine unless you try to take a LGBT activist role during your visit.
