Update: GOogle Support helped, actually. You can have multiple TXT records per subdomain. Instead of clicking Add for a new TXT record, you have to edit the existing one and then click the little + sign that appears to add more.

I feel kinda silly now...though I will say it's not the most intuitive way to do it.
