I'm not really one for the celebrity chefs on the Strip...last time we went, we drove downtown and wandered around that park made out of shipping containers and hit a restaurant a block or so from there. Wish I had written down names...we had great food and there seemed to be half a dozen or so up-and-coming bars and restaurants that *didn't* have the usual casino vibe to them.
I've been in Vegas a whopping three times - 1973, 1985, and 1995. Going to guess there has been a wee bit of change since my last visit.
