Yeah, I'd definitely explore other cuisines in Vegas. I'm sure there are some imported KC- or Texas-style joints out there somewhere, but nothing to write home about.
I'm not really one for the celebrity chefs on the Strip...last time we went, we drove downtown and wandered around that park made out of shipping containers and hit a restaurant a block or so from there. Wish I had written down names...we had great food and there seemed to be half a dozen or so up-and-coming bars and restaurants that *didn't* have the usual casino vibe to them.
