Supposedly the duty-free shops on the post-immigration, non-Schengen, air-side area are real duty-free (incl. VAT). Unless something changed recently, you can't get the VAT back, since you didn't pay it. Of course, Schengen has nothing to do with customs and taxes... The only valid answer, therefore, could come from somebody with recent relevant experience, anything else may be speculation.
