Now, I see that MCT at DFW for I-I is 70min so I'm not sure how this has cleared their automatic rebooking system, but what's the likelihood of the above connection happening? I checked other flight times and none looks better. I am familiar with DFW and have GE/Precheck, no luggage to worry and previously I've walked off HKG-DFW and through security in about 15 mins after arrival so I think even at 1 hour mark I should make it ok, but likely no time for lounge/shower.

Question is, will this work if I say nothing to AA and just check-in as normal, or will the system find the MCT issue at boarding/check-in and try to re-route me? If it's the latter then I'd rather find my own desired route now instead of departure day.
Find an alternate time/route and call AA. The computer system will eventually find your MCT violating itinerary and will change it when it does. Better to be out ahead of it now.

And I've done 15-20 minutes off plane to back through security when arriving internationally at DFW, but I wouldn't want to book anything that short.
