IMHO I do not believe it clearly says this when taken in context:

http://www.aircanada.com/en/giftcard/faq.html#faq:5-*

When redeemed online at aircanada.com, at the airport, with your travel agent or by calling Air Canada Reservations*, Air Canada Gift Cards can be used to purchase a flight, and to pay for a variety of travel options, fees and services**, including:

seat selection,
change fees,
upgrades,
additional checked baggage fees,
pet handling fees,
unaccompanied minor fees

At this time, the Air Canada Gift card cannot be used toward the payment of:

onboard purchases (e.g. headsets, beverages, duty-free items)
merchandise purchased at the Air Canada eBoutique
Aeroplan or other reward travel tickets
Air Canada Vacations packages
Air Canada Cargo products and services
tickets purchased as part of a group booking
hotel reservations, car rentals or RBC travel insurance
another gift card
a Flight Pass purchase
Air Canada Maple Leaf Club membership fees
*There are no Call Centre booking fees when you book a flight through Air Canada Reservations.
**Air Canada Gift Cards cannot be used to pay for any fees or upgrades during the online, mobile or self-service kiosk check-in process.
None of the 4 mentioned booking channels handle ACV issues, and not all handle eGift cards.
  • aircanada.com - doesn't deal with ACV
  • at the airport - can't use eGift card. Even if with a regular gift card one cannot pay for the self-serve check-in options and in advance they won't touch something that is ACV.
  • travel agent - although agents sell ACV tickets, AFAIK these are not done through the Air Canada TA web portal
  • Air Canada Reservations - doesn't deal with ACV, ACV reservations deals with this
