Agree with zzap that StR Saadiyat is most likely to suit your needs. The underutilised 8-lane Sheikh Khalifa highway linking Saadiyat to Yas means that both the airport and Ferrari World are very easy to reach.
So, it is now a family of FOUR, looking for best DXB property, criteria (in order) being location, beach/pool, lounge, elevation (kids like highrises) and cost. I have top SPG status, FWIW.

Thoughts?
None of the beach properties are high-rises (if you don't count the GH, which requires a short shuttle bus ride to reach the LRM beach).

I haven not yet stayed in the LRM, LM, Westin or Sheraton, but GH left me feeling indifferent considering the glowing reviews and the high rates. If you're willing to give up the beach, I would recommend the Sheraton Grand which is better situated for a lot more tourist attractions and better in terms of hardware than even the GH.

As said before I think you will find the beaches disappointing and pretty cool this time of year. Wild Wadi or Atlantis would be more interesting.
I've had the 2-bedroom apartment at the 4P SZR. Whilst quite functional and pleasant, it is still very much 4P standard and some way away from being "luxury" which seems to be OP's requirement.
