I have completely stopped connecting inbound international through Houston because there is no fast security line or no TSA Pre. I've waited up to an hour to get through security on international connections. Outbound, Houston is great through.

I would not worry about the snow in DEN - I have had very few missed connections because of weather there. Sure you can be unlucky and hit a big storm but thunderstorms in Houston are probably almost as much of an issue. At least DEN has a lot of runways to accommodate weather.
