Based on my experience, I would say even if it's true, only if loading is below certain threshold which I feel that should be 75% if not lower
So many times my adjacent E / F seat (on 330) was filled by a no-status passenger with tons of empty seats (even aisle seat) left on board......

Seat chose before DM picked the adjacent seat: Actually... I would say if the adjacent seat is occupied before released to airport... That's nothing to block so won't be any blocking as well
e.g. Just checked one of my upcoming booking... I'm in 25C on a A32x... I tried to make a dummy booking and I can pick 25AB

I experienced this yesterday as a GO. I was flying KUL-HKG on the 34J and sitting in a K window seat; I'd noticed that the H aisle seat was empty based on an ExpertFlyer search. When I asked if the seat next to me was still empty at airport check-in, the agent said that the seat had been blocked for me. It stayed blocked and unoccupied (one of ~5 on the flight) throughout the flight.

If you ask and loading is light, they'll try to accommodate... I tried once when I was SL and they entertained me
