The Copa upgrade you reference almost certainly booked into Z, which is also a non-earning fare class. Same deal as the Avianca ticket you're now complaining about.
You're wrong about that, I just checked my Asiana account to be sure. Asiana gave me 100% miles for my Copa upgrade. I copied and pasted the transaction below:
