Asia is a big place. :-)

If OP is booking to some place in India , xyz'astan or even IST (I think that is in Asia) then the TATL routing is normal. So these can book as a single BE if OP finds inventory.

But as you say, a true stop-over still breaks the fare and OP would be paying JFK-CDG and CDG-DEL (for example) separate due to the stop.

If OTOH, the OP is flying JFK-CDG-BKK then it is always 2 fares (AFAIK) and the stop does not matter.
