The reason it varies is the exchange rate IIRC even if you prepay the points are settled on the £ to $ rate on the day of checkout. Sometime you score with it sometimes you don't although I've not known it to be out by huge numbers unless you have a really high value reservation.

When your stay posts if you click on earning detail it will give you a breakdown of your points and IIRC it shows you the exchange rate and also the the spend less VAT. If the numbers from your confirmation and what is posting are varying greatly I would certainly check that they haven't deducted the VAT twice.
