I love flying AS and try to stay with them when I fly for work over AA but I do often end up on AA due to them having more flights on my route.

Given that redeeming miles is one of your priorities, I'd suggest AS. AA is moving to revenue-based earning for their own fares next year, and while that will probably be reflected in crediting to AS, you'd still be able to get full credit as an AS flyer on AS metal. It also doesn't hurt that MVP will give you all of the same benefits on AA that AAdvantage Gold does except for Oneworld status and AA upgrades.
By the way, you should be able to status match to MVP so you can have some elite benefits from the get-go.
