Assuming there is still I class availability on both sectors (to SFO-JFK-LHR) you should be charged the €300 change fee plus any difference to add an additional sector (which should be minimal). There's nothing stopping you getting out at JFK, dumping the rest of the trip and booking a separate journey to London, but I'd recommend advising BA that you're not going to be flying so the unused seats can be resold.
