South Korea? [I don't think there's time to plan for a trip to North Korea.] Taiwan? Australia or New Zealand? It also looks like you haven't been to Bangladesh or Pakistan, although obviously they don't celebrate Christmas.

Macao, although it's easiest to go by hydrofoil/ferry from Hong Kong (downtown or airport).
