I also have to recommend the Bellagio. On Saturday nights (and maybe Friday nights, too?), they present a wonderful gourmet buffet with some interesting options. The gourmet items change, but often feature more exotic dishes such as Kobe beef and saddle of wild boar in addition to the regular fare like Alaskan King (not queen like most of the other Vegas buffets) crab legs. The gourmet nights are the priciest, so here's a tip. If you don't mind eating a bit early, arrive during the end of lunch. You'll still pay the lunch price, and will already be seated when they change over to the dinner menu. I take advantage of this for the greater variety and to skip the long lines that begin to form around "prime" dinner hours. If you're doing it to save money on dinner, be sure to leave ample time to make it through the line to the cashier before dinner begins.

For Sunday brunch, I prefer the Sterling Brunch at Bally's, which someone else mentioned above. The Sterling brunch offers stone crabs and maine lobsters which I have not found at any of the other casino brunches. Be sure to make a reservation!
