I had the Hindu vegetarian IAH-EU in BF recently and must say it was tasty; I enjoyed it.
Agree - give AVML (Asian Vegetarian) a shot, you will end up with Indian Vegetarian and in my experience, more often than not it has been tasty, if not particularly healthy.
All that said, I wish UA would allow us to pre-order special meals at least on domestic transcons.
